Today I will teach you how to cook one of the most popular dishes in Nigeria: Egusi Soup.

Loni, n o kọ yin bi a ti nse ọkan ninu ase to gbajumọ julọ ni orilẹ ede Nigeria: Obe Ẹgusi.

We use egusi seeds to make the soup delicious and thick.

You will need palm oil for this recipe.

Palm oil smokes and burns fast so don’t heat it up too high.

Epo pupa ma ntete nse efin o si ma ntete njo, nitorina, ma jẹ ki ina po ni idi rẹ.

Palm oil has a lot of fat in it so it is very thick at room temperature.

Epo pupa ni ọpọlọpọ ọra ninu nitorina o ma ndipo ninu otutu yara.

Most people put cow skin and tripe in this soup. Chef Rafi will use healthier alternatives.

Ọpọlọpọ ma nfi pọnmọ ati inu ẹran sinu ọbẹ yi. Sugbon Onse ounje Rafi yi o lo awon eronja asaraloore miran.

For flavoring you must use dried crayfish.

Lati je ko ta sansan daradara ẹ ni lo lati lo ede gbigbẹ.

Let’s start cooking.

Grind the egusi seeds.

Lọ ẹgusi yi.

You can also buy egusi seeds already ground at the market.

Mix the egusi seeds with water to make a paste.

Po ẹgusi lilọ naa pọ pelu omi ki o le lee.

Boil the meat in a separate pot with onions.

Bọ ẹran ninu pọtu ọtọ pẹlu alubọsa.

Soak the dried fish and remove the bones.

Rẹ ẹja gbigbẹ sinu omi ki o si yọ egungun re kuro.

I only use natural ingredients. I don’t like knorr cubes.

Mo fẹran lati maa lo eronja adayeba nikan, nko fẹran ohun isebe Knorr.

Wash all the vegetables very well.

Ri daju pe o fọ awọn ẹfọ naa daradara.

Fry the egusi paste in palm oil and mix well.

Din ẹgusi naa ti oti po pọ ninu epo pupa ki o si ro po daadaa.

You can add the egusi in clumps.

O le fi ẹgusi naa si ni idi idi.

Put in the ground crayfish while stirring the egusi.

Da ede ti ati lo naa si nigba ti o ba nroo ẹfo naa.

Make sure the heat is low so the egusi does not burn.

Ri daju pe ina ko poju ni di pọtu  ki ẹgusi naa ma baa jona.

Now add water and the boiled meat.

Nisiyi bu omi ati ẹran bibọ sii.

If you use tripe, do not use the tripe broth.

Ti o ba lo inu ẹran ma lo omitooro re.

Put in the dried shrimps (ede)

Fi ede gbigbe sii.

You can add the cut up dried fish now.

O le fi eja gbigbẹ ti a ti ge naa si nisiyi.

Add the locust beans (iru).

Fi iru si.

Add the chopped tomatoes and okra.

Fi tomato ati ila ti a ti rẹ si.

Put in water as needed. Egusi soup is usually very thick.

Bu omi ti o ba nilo si, nitori ẹgusi ma n le.

In the last five minutes you can add the leafy vegetables.

Ni iṣẹju marun to gbẹhin o le ko awon ẹfọ naa sii.

Add salt and pepper to taste.

Fi iyọ ati ata si niwon ti o ba fẹ.

Most people like to use bitter leaf.

Ọpọlọpọ ma n lo ewuro.

If you like it spicy you can add pepper.

Ti o ba fẹran ounjẹ alata o le fi ata si.

This is best eaten with cassava fufu or pounded yam.

3 tablespoons red palm oil
